From greywater recycling systems at their Palisade facility — crucial in a water-scarce region — to innovative wine keg programs that significantly reduce packaging waste, sustainability is embedded into how the winery operates. Packaging alone accounts for a large portion of wine’s carbon footprint, and by using reusable kegs, Carboy has saved more than a million bottles, corks, and labels from being produced over the past decade.
Rather than treating sustainability as a separate initiative, Carboy builds it directly into infrastructure, operations, and long-term decision-making.

At the event, guests will have the opportunity to experience BLANCO, a Colorado-grown wine that perfectly reflects Slow Food’s “Good, Clean, and Fair” philosophy.
Crafted from hybrid grape varieties designed for resilience in Colorado’s challenging climate, BLANCO requires fewer chemical inputs, less water, and fewer tractor passes — reducing environmental impact while supporting regenerative practices. These climate-adapted varieties offer growers long-term stability while producing wines with vibrant acidity, lifted aromatics, and a clean, energetic finish.
It’s a powerful example of how innovation and sustainability can work together to create wines that are both delicious and responsible.
