About Our Instructor:

Mary began fermenting during covid which led to the foundation of Intentional Foods in 2021 when she began selling ferments at a farmers market. Since then, she has begun selling to a restaurant, and now hosts private dinners centered around fermented ingredients. Intentional Foods is a small fermentation forward food endeavor based in Denver. Chef Cappelletti seeks to connect people with one another, their food, and their community through the creativity that can be born out of a few simple ingredients.
